A 2.0 kg deboned duck stuffed with a galantine of chicken mince that has been seasoned with shallots, bacon, herbs and spices with a double row of black cherries laid in the centre of the duck. Ready to cook, placing on a rack 2 hours at 180 ̊C. Great also served cold. Serves approximately 10 persons.
